If the ad is to be believed and 'Aussie kids are weetbix kids', what are New Zealand kids? Well they're weetbix kids too. Over there the ad goes, 'Kiwi kids are weetbix kids.' I believe that more kids world wide should be weetbix kids. It's a good way to start the day. (No, I don't work for Sanitarium.)
My friend Fiona was asking about a signature dish. What recipe comes out regularly? Mine is a Chocolate Weetbix slice. I used to make this even before kids to take to work for shared morning teas. Another of my recipes using breafast cereal. Its so quick and easy and when your kids are refusing to eat you can ignore the butter and sugar quantities and think, 'At least he's getting some fibre!'.
I made the Chocolate Weetbix slice the other day for a trip to the park with some friends.

The kids loved it. A great morning with lovely friends. And a good excuse to make my Chocolate Weetbix slice...
CHOCOLATE WEETBIX SLICE
(Modified slightly from a recipe given to me by my aunty)
1 1/2 (one and a half) cups SR flour
3 Tablespoons cocoa powder
4 1/2 (four and a half) crushed weetbix
3/4 cup caster sugar
1 1/2 (one and a half) cups dessicated coconut
200g butter
3 Tablespoons golden syrup
1 teaspoon vanilla extract
- Sift flour and cocoa
- Combine all dry ingredients, rubbing your hands together through the mixture to crush the weetbix up as fine as possible.
- Melt butter and golden in a small saucepan then add the vanilla.
- Pour the butter mixture into the dry ingredients and mix. The final mixture will be crumbly.
- Tip into a greased and lined lamington tin (18cm x 28cm) and press with your hands until even and flat.
- Cook in a preheated oven at 160 deg cel for 25 mins. It will still be soft when it comes out but will harden when it cools. Cool in the tin, then ice.
- ICING - 2 cups of icing sugar in a bowl and add 1 Tablespoon of lemon juice- stir. Keep adding lemon juice, bit by bit, until you have a smooth spreadable mixture. Tip over slice, smooth out and sprinkle with coconut.
