I had been on the search for the perfect poached egg and looking for a fail safe method of preparing the perfect poached egg. Firm white, runny golden yolk, smooth elliptical shape. Oh, I’m fussy with my eggs, oh yes.
There’s also a Poached Egg flower.... ‘oh how very interesting’, I hear you say...

Anyway...
So far I have road tested the whirlpool method and the silicon cup method... I’ve been searching, experimenting. I had planned to also try the cling wrap method where you tear off a length of cling wrap, line a cup or small bowl with it then break an egg into it and tie it off with a knot being sure not to capture any air. The egg, wrapped in plastic (Twin Peaks style)(am I showing my age?)(does anyone get that reference?)(am I using too many (( )))?) anyway, the egg wrapped in plastic is lowered into a simmering saucepan of water until cooked. I don’t like it. I just don’t like the idea of hot plastic being in contact with my food. I don’t like it. I have heard that some restaurants roll cuts of meat like scotch fillet in cling wrap and refrigerate, this is fine, helps keep it’s shape I don’t have a problem with the process to this point. The rolled and wrapped fillet is then sliced into serving sized steaks and COOKED WITH THE PLASTIC STILL ON!! I don’t like it.
So lucky I didn’t try that poaching method, I may have died.
The news I am trying slowly to get to is this- I HAVE FOUND THE PERFECT EGG POACHING METHOD! JOB DONE!
And the answer is simple. The secret is simply to use FRESH EGGS. That’s it.
If you come across a freshly laid egg, poach it. You won’t even need vinegar in the water. You don’t even need to make a whirlpool. Just get some water simmering in a saucepan, or a frypan (you don’t need much water) and break the egg in. The whites from fresh eggs will not run into the water. The yolk will not separate from the white. It will be perfect. Every time.
Now for the perfect piece of toast.... perhaps this marvellous contraption can help with this quest... the glide toaster...
